Freeze drying removes moisture by freezing the loaded material, then drawing the chamber down to a vacuum below 15 Pa so that frozen water sublimates directly to vapor. The cold condenser, held at -35°C or lower, traps that vapor while the product dries at low temperature across the four trays.
