Freeze drying removes water by sublimation. The sample is first frozen, then placed under vacuum where the ice converts directly to vapor without passing through a liquid phase. The water vapor is captured on the low-temperature condenser (cold trap), while the vacuum pump maintains the reduced pressure required for the process. Keeping material frozen throughout drying helps retain the original form and volume.
